On paper, it checks every box: a 9 year rye aged in a Canton barrel, coopered from staves air dried for 36 months. These are high level barrels that allow natural microbial activity to soften the more aggressive compounds of new American oak. Its the kind of detail that promises elegance before the glass even hits the table. The nose, however,
